The best marinade in the world ever.
Â
Put six tablespoons of plain yoghurt in a bowl and whisk. Then add the following and mix together:
2 tablespoons lemon juice.
1 teaspoon salt.
1 inch cube of fresh ginger finely grated.
To make the marinade.
2-3 cloves of garlic crushed.
1 teaspoon of cumin.
Half teaspoon chilli.
Half teaspoon garam masala.
Half- 1 teaspoon turmeric.
Half a teaspoon fresh chopped coriander (slightly more if dried).
A few drops of red or yellow food dye (Just to make it look nice).
Cut chicken into about 1 inch cubes mix into the marinade and leave in the fridge for 6-24 hours. After this take out the chicken and put on skewers chicken, pepper or onion repeated until the screwier is full.Cook on the B-B-Q until the chicken is cooked right through and eat.The pepper or onion stops the chicken welding into one solid lump. The yoghurt helps to keep the chicken moist. If you know someone with a Tandoori oven then borrow it and cook it in that. I know it sounds fiddly but it doesn’t take long and the results are well worth the effort.
